The Bathers Pavilion Cafe
Balmoral, Sydney
Once you enter The Bathers Pavilion, the first thing you notice is the beachview, which offers an overwhelming background to the clean line of the restaurant and cafe. The proximity of the beach is a constant reminder of the link between a beach pavilion and the reinvented Bathers. While the historic building has now clearly outlived its original purpose, a new life has been breathed into its fabric. It is such a unique experience to sit in the cafe or restaurant and absorb the view and the activities of the beach and the bay, with its ever-present beach goers and boats sailing in the distance. And more than once we have been graced with the presence whales and dolphins in full view of Bathers.

Like a theatre, diners can see the six foot four – surfing, motorbike riding, tattooed “mountain of a man” – so described by one MasterChef contestant, in action. Together with Head Chef and fellow Italian Fulvio Lancione and their brigade of passionate chefs and cooks, Italian theatre remains alive and well at Spiedo as Pavoni and his troupe hand-make Lombardian casoncelli pasta, gnocchi, risotto, and gelato for all to see.
